The 3 bottles are designed to deconstruct the distillery’s DNA into its three core pillars: Sherry & Sweet, Woody & Vanillic, and Peaty & Salty.

Tasting Notes

Sherry & Sweet

  • Nose: Deep and jammy. Dark raisins, dried figs, and milk chocolate. There is a distinct scent of maple syrupand walnut cake.

  • Palate: A thick, oily arrival of stewed plums and cinnamon. The "sweetness" is balanced by a drying cacao nibbitterness and a hint of leather.

  • Finish: Long and warming with black cherry and a touch of clove.

Woody & Vanillic

  • Nose: High-toned and fragrant. Vanilla pods, fresh sawdust, and coconut shavings. It smells like a bakery in the morning—buttered toast and honey.

  • Palate: Very structural. Creamy custard and white chocolate meet a sharp, spicy kick of ginger and toasted oak. It has a "chewy" texture that coats the mouth.

  • Finish: Clean and drying with sweet tobacco and a lingering citrus zest.

Peaty & Salty

  • Nose: Pure Islay-on-the-Pacific. Smoldering driftwood, sea spray, and iodine. Beneath the smoke is a savory note of salted kelp and lemon juice.

  • Palate: Explosive and "gritty." Campfire ash and salted licorice dominate, followed by a surprisingly sweet malty backbone. It tastes like the sea.

  • Finish: Intense and "glowy." A final punch of brine, black pepper, and cold smoke.
