True to its evocative name, "Cuquillo Black Olives," it leans into the savory, saline, and mineral-driven character of the distillery’s spirit, which is a departure from the heavy sherry influence often found in official Bunnahabhain releases.

Tasting Notes

Nose: Initially tight and mineral-forward, evoking coastal imagery of rockpools, wet shingle, and sea spray. Beneath the saltiness lies a delicate sweetness of pear juice and wildflower honey, alongside a peculiar but intriguing "dusty" note reminiscent of chalk and crushed aspirin. With a splash of water, more greenery emerges, bringing out scents of underripe mango and river reeds.

Palate: The arrival is sharp and precise, featuring a stony, flinty texture that feels like granite and limestone. Savory, umami-rich notes of sage-heavy sausages and fresh sea-bass are brightened by a tart lemon acidity and a touch of nutmeg spice. When diluted, the spirit undergoes a dramatic shift toward a "bakehouse" profile, revealing softer layers of buttery pastry, warm crepes, and toffee-covered choux buns.

Finish: Medium in length and impressively crisp. It leaves a lingering citrus tartness of grapefruit and lemon peel, anchored by the warmth of freshly baked malt bread and a persistent, stony mineral quality that keeps the palate refreshed and clean.
