Cask Type: First-Fill Pedro Ximénez Sherry Butt
The "Deployment 1" was the bottle that set the tone for this series. Using a first-fill Pedro Ximénez (PX) cask—the "King of Sherries"—this 14-year-old is a syrupy, decadent, and unapologetically sweet explosion. Bottled at a massive 60.2%, it is remarkably smooth for its proof, carrying the signature "sticky" texture that Billy Walker has made world-famous.

Nose: A total fruit bomb. Sticky toffee pudding, Medjool dates, and black treacle. Beneath the sugar is a hint of damson plums and red licorice.

Palate: Massive and syrupy. Raisins soaked in rum, dark muscovado sugar, and chocolate-covered figs. The high ABV provides a spicy prickle of cinnamon and nutmeg that prevents the sweetness from becoming cloying.

If "Deployment 1" was the opening salvo, this 15-year-old Oloroso single cask is the heavy artillery. Matured for a decade and a half in a first-fill Oloroso butt, this is a masterclass in dry, nutty, and savory sherry influence. At 59.1% ABV, it retains a massive structural integrity, ensuring the rich Speyside spirit isn't lost behind the wood. This is "Old School" GlenAllachie at its most muscular.

Nose: Deep and resonant. Notes of antique leather, roasted walnuts, and dark chocolate orange. There is a heavy scent of dried tobacco leaf and espresso beans.

Palate: Intense and chewy. Dundee cake, bitter marmalade, and black cherries are wrapped in a thick layer of clove and star anise spice.
