The Caol Ila 12 Year Old (Fèis Ìle 2021 Release) is a fascinating study in contrast. While the Lagavulin releases from that same "virtual" festival year (like the 13-year-old Port finish we discussed) leaned into dark, brooding sweetness, this Caol Ila went for something much more floral and aromatic.

It was vatted from refill American Oak and finished in Moscatel-seasoned casks, a choice that highlights the "elegant" side of Caol Ila rather than its brute force.

Tasting Notes

Nose: Remarkably fragrant and bright. It opens with honeysuckle, orange blossom, and ripe green grapes. The smoke is unmistakably Caol Ila but softened—think scented tobacco and cold wood ash rather than heavy iodine. As it breathes, there is a sweet, pastry-like note of lemon tart and vanilla icing.

Palate: The texture is oily and mouth-coating. The arrival is a burst of sweetness—candied lemon peel, apricots, and honey. This is immediately followed by a wave of savory peat smoke and sea salt. Mid-palate, the Moscatel influence brings a "floral spice," with hints of nutmeg and jasmine tea, balanced by the distillery's classic oily, mineral character.

Finish: Long and beautifully balanced. The sweetness of the grapes lingers alongside a dry, flinty smoke. It leaves a final impression of salted caramel and a touch of menthol freshness.

Why it's special

• The "Grape & Smoke" Harmony: Moscatel is known for being high-toned and "grapy." In this bottling, it doesn't mask the peat; it lifts it, making the smoke feel more like "incense" and less like "bonfire."

• The "Hidden" Caol Ila: Because Caol Ila is the workhorse of the Islay blending world, it is often overlooked. Releases like this prove that when given a sophisticated finish and bottled at cask strength, it can compete with the best of Lagavulin or Ardbeg.
