The Ardbeg Dark Cove (2016 Release) was the flagship for Ardbeg Day 2016, famously marketed as the "darkest Ardbeg ever." It was inspired by Islay's history of illicit distillation and smuggling in "dark coves" around the coast.
This release is a marriage of classic Ardbeg matured in ex-Bourbon casks with a "heart" of spirit matured in "dark" sherry casks (widely believed to be high-quality, old Pedro Ximénez casks). It comes in two versions: the widely available General Release (46.5%) and the high-proof Committee Release (55%).
Tasting Notes
Nose: A bold, "thick" aroma. It opens with dark chocolate, rich treacle toffee, and distant bonfires. There is a distinct savory edge—reminiscent of char siu pork and smoked ham—balanced by zesty lime and a secret hint of ground coffee. The smoke is tarry and medicinal, like old creosoted fences in the rain.
Palate: Oily and almost tart on the tongue. Waves of smouldering charcoal and wood polish are met with a surge of raisins, dates, and candied ginger. The mid-palate reveals "industrial" notes: tarry rope, squid ink, and black pepper. Despite the "dark" theme, there is a surprising floral lift—think of lavender or dried herbs—tucked behind the smoke.
Finish: Long, spicy, and resonant. It leaves a lingering trail of toffee, cold espresso, and tar. A final, refreshing flick of menthol and sea salt keeps the heavy sherry influence from feeling cloying.
