Rather than discarding it, Dr. Bill Lumsden ordered the washback lids to be opened, allowing the fermentation to continue for an unprecedented three weeks (compared to the usual 72 hours).

The result is a 13-year-old Ardbeg that is wildly funky, floral, and "yeasty," representing a flavor profile that literally cannot be recreated by design.

Tasting Notes

Nose: Startlingly fresh and "sharp." It opens with an intense burst of lime juice, green apple, and white grape. The extended fermentation introduces a unique bread-like funk—think of sourdough starter or fresh brewer’s yeast.
