The Ardbeg Fermutation is perhaps the most famous "happy accident" in the distillery’s history. In 2007, a boiler breakdown at the distillery threatened to ruin several washbacks of fermenting malt. Rather than discarding it, Dr. Bill Lumsden ordered the washback lids to be opened, allowing the fermentation to continue for an unprecedented three weeks (compared to the usual 72 hours).
The result is a 13-year-old Ardbeg that is wildly funky, floral, and "yeasty," representing a flavor profile that literally cannot be recreated by design.
Tasting Notes
Nose: Startlingly fresh and "sharp." It opens with an intense burst of lime juice, green apple, and white grape. The extended fermentation introduces a unique bread-like funk—think of sourdough starter or fresh brewer’s yeast. The smoke is subtle and "clean," more like distant garden bonfires than heavy peat, with a lovely floral top note of pine needles and wild mint.
Palate: Zesty and "effervescent" on the tongue. It leads with a tart sweetness of grapefruit and lemon curd, followed by a savory, herbal layer of fennel and fresh-cut grass. The texture is oily but light. Mid-palate, the "fermentation funk" returns with notes of buttermilk and salty crackers, balanced by Ardbeg's signature sooty smoke.
Finish: Long, crisp, and drying. It leaves a lingering sensation of minty peat, lime pith, and toasted oak. The final impression is remarkably "bright" and mineral-forward.

A One-Off Profile: Because this was caused by a mechanical failure, the specific ester profile created by a 3-week fermentation is likely a "once-in-a-lifetime" flavor. You are tasting a literal anomaly.
